She states in the recipe to use to your taste, but if you don't like cloves you can use nutmeg instead....again to taste I'm assuming. I think I will maybe use nutmeg.

I found this unique cook book aimed at men who can't cook. It's called, " A Man, A Can, A Plan." It has 50 different recipes whose ingredients all come from a can with the exception of the meat. I'm gonna try this meatloaf recipe this weekend.

Well any recipe that starts off with dumping an ingredient and then adds squishing , sounds a definite 'man' recipe Mr. R. :smt001 ..... if it works out you might want to encourage Wakey to have a go at it . ( He was interested in a meatloaf recipe, I believe)

K, I think last year I used about half the amount of cloves suggested. Or as Silver said use the nutmeg. Last year I made double the qty so we could reheat it and have it with leftover. I LOVE bread sauce.

Last night I asked Klaus - the chef for 50 years - if he liked bread sauce. He's never heard of it! :smt011

I told him how it's made and he liked the idea, so I'm going to make some for Christmas dinner.

It is a sauce - usually pretty thick in consistency and usually served with Turkey. To me it is not Christmas dinner without bread sauce and as I mentioned I have converted many to it.

sounds good Silver.

Caer, I pour it over or put it next to the turkey, like gravy. I make my sauce a little thicker - I have had some where it is very runny like gravy other times where it is more solid, like the consistency of grits or even oatmeal.

I made Delia's recipe a couple years ago, but the results were, well, unacceptable. A friend, who is a fantastic cook, says that she doesn't bother anymore. She brought me a couple packets of Colman's :smt020

I'm sure it's not as good as yours, Tex.

I read about Marguerite Patten OBE in the newspaper the other day. She worked in the ministry of food during WWII and was the original celebrity chef/cook when she appeared as a cooking expert on the BBC's show Designed for Women in 1947.


Apparently, Patten who is now 91, has been making podcasts so that young people can learn how to make some nice, but easy to make, food.


This is the recipe from her 'pudcast' for christmas pudding done in the microwave!


Ingredients:

50g butter
50g plain flour
One teaspoon of mixed spice
75g of white breadcrumbs
100g soft dark brown sugar
150g sultanas
75g raisins
50g dates
50g cherries
125g currants
25g coarsely chopped lemon peel
2 eggs
2 tablespoons of black treacle
1 tablespoon of golden syrup
50ml orange juice
50ml apple juice

Brandy (optional)


Method

1. Sieve all the dry ingredients together and mix well.

2. Stir in all remaining ingredients until mixed

3. Lightly grease a half litre (one pint) pudding basin and fill with mixture

4. Cover with cling-film and make a slit in the top to allow steam to escape. Cook in microwave on high for ten minutes

5. Allow to stand for ten minutes after cooking. Sprinkle with brandy if desired and serve.

Well Delia's bread sauce went down a treat in our house ... it was delicious!!!!

I used 12 cloves but I will try and halve the printed recipe next time as it made quite a lot.

Who here does not like The Cheesecake Factory's cheesecake? If you don't, then don't read on. The other day on GMA they had a chap who's replicated various famous restaurants' recipes and I made this yesterday. I tastes just like the original and shall be making it myself from now on instead of paying through the nose for it......

I did not use their topping though, I make a blueberry sauce and a raspberry sauces instead for it.



Oscar and Evelyn Overton's wholesale cheesecake company was successful quickly after it first started selling creamy cheesecakes like this restaurant chain clone in the early 1970s.

When some restaurants balked at the prices the company was charging for high-end desserts, Oscar and Evelyn's son David decided it was time to open his own restaurant, offering a wide variety of quality meal choices in huge portions, and, of course, the famous cheesecakes for dessert.

Today the chain has over 87 stores across the country, and consistently ranks number one on the list of highest grossing single stores for a U.S. restaurant chain.

Baking your cheesecakes in a water bath is part of the secret to producing beautiful cheesecakes at home with a texture similar to those sold in the restaurant. The water surrounds your cheesecake to keep it moist as it cooks, and the moisture helps prevent ugly cracking.

You'll also start the oven very hot for just a short time, then crank it down to finish. I also suggest lining your cheesecake pan with parchment paper to help get the lining out of the pan when it's done without a hassle.


Crust Ingredients:

1 ½ cups graham cracker crumbs
¼ teaspoon ground cinnamon
1/3 cup melted margarine



Filling Ingredients:

4 8-ounce pkgs. cream cheese
1 ¼ cups granulated sugar
½ cup sour cream
2 teaspoons vanilla extract
5 eggs



Topping Ingredients:

½ cup sour cream
2 teaspoons granulated sugar
Canned whipped cream (optional)



Directions:

1. Preheat oven to 475 degrees. Place a large pan or oven-safe skillet (that the cheesecake pan will fit inside) filled with about ½-inch of water into the oven while it preheats. This will be your water bath.

2. Combine 1 ½ cups graham cracker crumbs and ¼ teaspoon cinnamon into a medium bowl. Mix in 1/3 cup melted margarine. Press the crumb into a 9-inch spring form pan that has been lined on the bottom and side with parchment paper. Use the bottom of a drinking glass to press the crumb mixture into the bottom of the pan and about 2/3 the way up the side. Wrap a large piece of foil around the bottom of the pan to keep the cheesecake dry when placed in the water bath in the oven. Put the crust in your freezer until the filling is done.


3. Use an electric mixer to combine the cream cheese with sugar, sour cream, and vanilla. Blend mixture for a couple of minutes or until the ingredients are smooth and creamy. Be sure to scrape down the sides of the bowl. Whisk the eggs in a medium bowl and then add them to the cream cheese mixture. Blend the mixture just enough to integrate the eggs.


4. Remove the crust from the freezer and pour the filling into it.


5. Carefully place the cheesecake into the preheated water bath. Bake for 12 minutes at 475 degrees, then turn the oven down to 350 degrees and bake for 50 to 60 minutes or until the top of the cheesecake turns a light brown or tan color. Remove the cheesecake from the oven to cool.

6. When the cheesecake has cooled, combine ½ cup sour cream and 2 teaspoons sugar. Spread the sweetened sour cream over the entire top surface of the cheesecake. Cover and chill the cheesecake in the refrigerator for at least 4 hours. To serve, slice the cheesecake into 12 equal portions. Apply a pile of canned whipped cream to the top of each slice and serve. Makes 12 servings.

I love cheesecake. All cheescake. It's about the only desert I wont turn down if it's offered. Specially if it's got some cream on it as well. I don't normally go for deserts, I don't have a sweet tooth, but I'm a bit of a sucker for that old restaraunt regular: Tiramisu - sad I know. Though, I draw the line at Black Forest Gateaux.

I'm not too fond of Tiramisu as the ones I've had were awfully sweet....says she who puts three teaspoons of sugar in her tea every morning!

I don't really like sweet things in general though. I never put sugar in tea, and I like my tea brewed 'proper'. I'm a stickler for that. No builders tea for Dragon! And I can't believe it when people add milk without taking the tea bag out- philistines!!!

I do put sugar in coffee though, but usually half a spoon, regardless of strong I make it.

I love cheesecake, and I knew to bake it in a Bain Marie as my Granmere always did. The water bath works a wonder with baked custards as well.

They've already banned trans fats in restaurants in most major cities here (including McD's and Kentucky Fried Chicken). Massachusetts is thinking of banning them statewide. I don't think this would effect what you make at home, though.

No. I'm pretty sure it's just restaurants that would be effected. You know. It's weird. I really don't understand why you have to tell people that eating high starch, high fat content food all the time is unhealthy. You'd think they could figure it out themselves. I love my donuts and my french fries, but I don't eat them everyday. It's like I'm being punished for having moderation. "We can't allow these poor folks who are dietarily challenged to suffer because we were taught to eat right and exercise. :smt011

Sure! And I recently got The Osmonds and The Cowsills, too! I think I have all of the Monkees' albums. Oh, and remember The Ohio Express and The 1910 Fruitgum Company? They were actually the same group or something like that, so I have both on one CD.
